Enjoyed making these gems used the basic whoopie mix (see below for recipe)

made a butter icing for the filling and mixed half with  a little green food colouring and crushed peppermints (yeah forgot my essence flavouring home) I  crushed them into a fine powder, did not take long so quick and easy and mixed into the mixture and piped.

Did the same for the vanilla ones, used a vanilla extract paste which worked better than the liquid in this case.

Ingredients

125g butter

150g chocolate, minimum 70% cocoa solids

100g chocolate, minimum 70% cocoa solids, for melting (optional)

225g sugar

3 free-range eggs

1 tsp vanilla extract

250g flour

30g cocoa powder

½ tsp baking powder

Filling

300g icing sugar

100g butter

(food colouring and flavouring if desired)

Method

Preheat the oven to 180C/350F/Gas 4. Line a baking tray with greaseproof paper.

Melt the butter and chocolate in a bowl set over a pan of simmering water. (Do not let the base of the bowl touch the water.)

In a separate bowl whisk together the sugar, eggs and vanilla. Then fold in the chocolate mixture.

In a separate bowl, sift the flour, cocoa and baking powder together, then fold into the chocolate and egg mixture, until thoroughly combined.

Place tablespoonfuls of the mixture onto the baking tray (should make 36 biscuits) and bake in the oven for 6-8 minutes.

Remove from the oven and set aside to cool on a rack.

Cream butter, icing sugar and vanilla essence together until well blended and fluffy, pipe onto one half of the cooled whoopies and sandwich together.
