Perfect for a nice  spring time evening meal delights the taste buds with a little spiciness of chilli.

1-2 chicken breast
half a chilli
3-4 cloves of garlic
1 Red Onion
1 Tbsp Paprika powder
1 Tbsp Olive oil
1/2 tsp Basil (if using fresh then take a healthy picking of 6-8 leaves)
1/2 tsp Rosemary( if using fresh take the leaves from one stick)
1 small tub of greek plain yoghurt
1 tsp of Hot pepper sauce (optional) I used a yellow pepper sauce.
1 ripe mango
1 spring onion
handful of Pine nuts

mix salad
half cucumber
half fresh paprika


Pre heat oven to 200c

For the marinade finely chop garlic put half in a bowl and half in a dry frying pan then finely chop chilli and put half in the bowl with the garlic, dice red onions and put half in the bowl with the garlic add the powdered paprika, basil, rosemary, oil and yoghurt mix tasted for flavour adjust if needed.

wash and cut chicken and add to the marinade mix and set aside for at least 45 mins

place in a deep dish, cover with foil and bake for 20 mins

Cut up the Mango in strips and spring onion mix in the rest of the chilli (at this stage you can add a little salt and a fruit dressing I used a pomigrante salad dressing just to coat the Mango)

For the the salad cut up the cucumber and paprika mix with onion and mixed lettuce.

Toast the pine nuts and the rest of the garlic in the frying pan no oil is needed toast on a medium to low heat until; pine nuts are starting to turn slightly brown.

For the final stage of the chicken finsih cooking on a grill setting for 5-8 mins with the foil removed, after this mix with the Mango mixture and sprinkle toasted pine nuts and garlic and serve with fresh salad.

I think that is everything but as always you can adjust it we like it hot so I had added the hot pepper sauce to the marinade.

Simple delish Soup added the sweet potato and Chilli, for the flavour and heat, made with a chicken stock.

With the regular garlic and onions and pepper.

Chicken & Dumpling Soup

Chicken Breast ( you can use legs and thighs)
Sweet Potatoes
Regular Potatoes
Green Bananas
Chicken Seasoning
Mixed Herbs
1 veg or chicken stock cube

Self raising Flour

Cut all ingredients fairly large chicken can be cut into nice size cubes if using chicken with the bone i.e leg or thigh u can leave these whole just season with chicken season add garlic and onions and brown off in a little oil and set aside.

Bring some water to boil add stock cube 

While the water is heating up prepare your dumplings you can use a mixer with a dough hook if you like, mix all dry ingredients to pliable dough with the final kneading on a flour top then cover and leave to rest

Once stock dissolved and water is boiling add all ingredients a part from the pumpkin, sweet potatoes and chicken, reduce the heat to a simmer add these after about 10 mins and stir.

while this is simmering make dumplings and pop into soup cover and leave to cook, check the seasoning and adjust if needed.

Check after 5-10 mins stir and leave to cook until dumplings are ready
























Made this over the weekend for a movie time snack, perfectly crunchy for a movie night at home adjust seasoning to taste you can have it more spicy or not at all.

Popcorn Chicken

150g plain flour
2 tsp Chili pepper
2 tsp Paprika
2 tsp Onion powder
1 tsp Thyme
1 tsp Marjoram
1 tsp Basil
1 tsp Parsley
2 tsp Ceyanne pepper
2 tsp Garlic powder
1 tsp English mustard powder
1 tbsp Chicken seasoning without salt
Salt season to taste
1/2 pint of milk
4 chicken breasts cut into nuggets
300ml vegetable oil
2 large bowls

1. Mix the all dry ingredients together in a bowl, then put a 1/4 of the mix in one of the bowls and mix with the milk until a med thick batter, at this stage u can taste the batter to see if it need more chilli or salt just a tiny bit will let u know if it needs more or not.

2. Wash the chicken and cut into small nugget/popcorn size pieces.

3. Put your cut chicken in the bowl with the seasoned batter and mix well let it sit for20-40 mins

4. Heat the vegetable oil in a deep frying pan or deep-fat fryer to 180°c (at which point, a cube of bread dropped in it should turn golden brown after 30 seconds).

5. Using a fork pick out the chicken piece by piece and dip the chicken pieces in the dry flour mixture, cover with flour and Fry, in batches, for 8 minutes or until golden brown and cooked through. Drain on kitchen paper, sprinkle with salt and serve
